Makes 4 pancakes
Ingredients:
240g boiling water
1/2 tsp salt
Toasted sesame oil, for brushing
8 spring onions, thinly sliced
Method:
Mix the flour and salt in a bowl, add the boiling water, and stir until a rough dough forms. Remove the dough from the bowl and knead for 2 minutes. Place the dough in the bowl and cover with a tea towel, and allow to rest for 30 minutes.
Once rested, remove the dough from the bowl and divide into 4 equal portions. Using a rolling pin, roll out a portion of dough to make a 30cm circle. Brush sesame oil over the surface of the dough. Scatter over a 1/4 of the sliced spring onions. Roll into a tight log and then twist into a spiral tucking the end under.
Roll out into a flat round approximately 0.5 cm thick. Brush with sesame oil and cook in a pan on medium heat for approximately 2-3 minutes or until golden, flip, and cook on the other side. Repeat with remaining dough.
