Cooking time: 45 min Serves 8
1 ¾ cup The Kind Harvest Co. Self Raising Flour
½ tsp salt
2/3 cup brown sugar (can be replaced with caster sugar)
1/3 cup unsalted butter
1 large egg
2 mashed bananas (ripe)
½ cup fresh or frozen raspberries
1 tbsp lemon juice
Mix flour and salt together. Set aside.
In a different bowl, mix brown sugar and butter together until well combined.
Add egg and mix until well combined.
Add in mashed bananas, raspberries and lemon juice.
Add flour to wet mix, using a wooden spoon (or at low/medium speed) to mix all ingredients together until all the flour is combined with the wet mix.
Pour into oiled bread tin and bake at 180C (160C fan forced) for 45min.
